- 1 tin Epicure Black Beans
- 5 tablespoons Epicure Mojo Verde Pesto
- 8 flour tortillas
- ½ red pepper, chopped
- 125g cheddar cheese, grated
- 4 teaspoons Epicure Clarified French Butter

Tip beans and pesto into a medium bowl and mash to a rough paste. Divide the bean mixture between 8 tortillas, spreading over one half of each tortilla. Top with red pepper and then cheese. Season with salt and pepper. Fold over the other half to cover.

Heat a large frying pan over medium. Add 1 teaspoon clarified butter. Add two quesadillas to the pan and cook 1-2 min until golden, flip carefully and cook another 1-2 minutes until golden and cheese is melted. Continue with remaining quesadillas. Serve with additional pesto if desired.
