These pretty patties make for a nice presentation when serving to guests. But if you favour the traditional, simply press the entire mixture into a hot buttered frying pan and cook until browned on each side. If you don’t have the exact amounts given here no problem, use equal parts potatoes and cabbage (in volume) and things will turn out just fine.

- 400g mashed potatoes, seasoned well
- 225g cooked cabbage, seasoned well and chopped small
- 20g butter
- 20g plain flour
- Epicure Fiery Piccalilli, to serve

Stir together the cabbage and potatoes until well mixed. Press and shape into 8 patties.

Tip flour onto a plate and coat patties in the flour.

Heat a pan over medium. Melt in 5g butter then add 4 patties and cook for 2-3 minutes, or until golden brown. Flip the patties and add another 5g butter, swirling to distribute. Cook for an additional 2-3 minutes until golden and heated through. Repeat the process with the remaining patties.

Serve with a spoonful of fiery piccalilli.

Note
If you would like to start with fresh cabbage use 225g sliced fresh cabbage + ½ onion, chopped. Cook onion with a pat of butter and a pinch of salt for 3 minutes over medium. Add cabbage and another pinch of salt. Cooking for 5 minute, or until wilted. Taste and season well.
