Who knew a can of peaches could make such a craveworthy dessert? Here we’ve grilled our tinned peach halves to caramelize them and warm them through, then we’ve taken the leftover syrup and turned it into a velvety butterscotch-esque sauce. Add a spoonful of ice cream and a sprinkling of coconut and you have yourself one fine (and quick) dessert.

- 1 tin Epicure Peach Halves in Syrup
- 1/2 teaspoon cinnamon
- 1 tablespoon demerara sugar
- 10g salted butter
- 1/2 teaspoon vanilla
- vanilla ice cream, for serving
- toasted coconut chips

Preheat a grill pan or barbecue to medium-high heat.

Drain the peaches, reserving syrup. Grill peaches on the grill pan or barbecue for 3-4 minutes until charred, give them a quarter turn and grill another 3 minutes, until warmed through and nicely caramelized.

Meanwhile, tip the reserved syrup, cinnamon and sugar into a small saucepan. Bring up to a boil and let cook for 5 minutes, until thickened slightly. Remove from the heat and stir in butter and vanilla.

Put 2-3 grilled peach halves onto a plate or bowl, add a scoop of ice cream, drizzle over the warm sauce and sprinkle on some coconut. Dig in.
