Goose fat is good for more than just potatoes. Why not use it to add delicious flavour and caramelization to your favourite roasted veggies. Here, we’ve paired it with sweet, nutty brussels sprouts and salty, smoked bacon for a comforting and hearty side dish.

- 2 tablespoons Epicure Goose Fat, melted
- 450g brussels sprouts, halved
- 50g smoked streaky bacon, chopped
- drizzle of balsamic vinegar

Preheat oven to 200ºC, Gas Mark 6.

Spread brussels sprouts onto a baking tray. Scatter over bacon, along with ½ teaspoon fine salt and ¼ teaspoon cracked black pepper. Drizzle over goose fat and toss everything to coat evenly. Spread everything out into an even layer, placing the brussels sprouts cut side down.

Pop into the oven and bake for 30 minutes or until the bottoms of the brussels sprouts are starting to brown. Toss and bake an additional 5-10 minutes, or until bacon is crisp and brussels sprouts are tender and golden brown.

Taste and season, then sprinkle with a bit of balsamic, if you like.
