Smoky Chipotle Chilli Con Carne A flavoursome twist to an everyday favourite
Ingredients
- 1 pack Epicure Smoky Chipotle Seasoning Mix
- 1 onion, diced
- 1 red pepper, diced
- 1 clove garlic, peeled and finely chopped
- 500g minced beef
- 1 tin Epicure Chopped Tomatoes
- 1 tin Epicure Red Kidney Beans
- 2 tbs Epicure Double Concentrated Tomato Purée (optional)

Gently fry the onion in a splash of oil in a large pan until soft, before adding in the diced red pepper and garlic.

Sprinkle over the Seasoning Mix, stir well and cook for around 5 minutes.

Add in the beef in batches gently frying to brown evenly all over. Add the tinned tomatoes and around 300ml of water bringing to the boil.

Finally add the drained kidney beans, stir in well and turn down the heat slightly to gently simmer for 30 minutes, giving it an occasional stir.

Serve with freshly cooked rice and garnish with chopped coriander and a dollop of sour cream.
